Beef Stew for Breakfast?

Yes!  I woke up today and knew exactly what my breakfast was going to be... homemade Beef Stew.  And guess what?  My 28 month old soon joined me in having a bowl :)  My wife and I made it fresh yesterday and we had it for dinner last night.  Now I know some of you (or all of you) are thinking that it sounds disgusting to have "dinner" for breakfast, but haven't you ever heard of "breakfast" for dinner (eggs, bacon, pancakes, etc)??  Why should it be any different?  Like I always say, "If it tastes good at 6pm it will taste good at 7am.  Plus, it's easy!  It's the perfect solution for someone who feels like there is not enough time in the morning to have a hearty and healthy meal for breakfast.

I have a lot of clients tell me that they don't have the time to make anything in the morning and so they have a cup of coffee with an English muffin or a little cup of yogurt.  The most common response / question is follow up with is, "What about eating leftovers from dinner?"  You would crack up if I made a compilation of everybody's faces after asking them that question.  From the looks on their faces, you would think I asked them to eat chicken gizzards.  But think about it... It's already delicious, prepared food and all you have to do is heat it up.  And no, not in the microwave!  Don't get me started on those.  I will have to do another post about microwaves, but in the mean time I will say one thing about them...  Throw it away or give it to someone you don't like!

I portioned out some stew for both my son and I, put it in a pot, turned the burner on and covered it with a lid.  While it was heating up I was able to get our spoons ready, put some more dishes away and put my son Jimmy in his high chair.  It was that easy and we both loved it!  I didn't have to worry about cooking a whole breakfast for the two of us, which comes with the clean up as well.  And my son and I were both able to have a filling and nutritious breakfast that held us over till lunch.  It felt like a win, win to me.

So I encourage you to try the same thing.  Tonight or tomorrow when you are figuring out what to make for dinner, make sure you prepare enough so that you can have some leftovers for yourself the next day and see how easy it is.  Also, take note to how much better you feel after breakfast and how much more productive you are at work or during the day.  Try it out and let me know how it turns out.  Thanks for reading!
