Happy Friday! I hope you have something nice planned for the weekend, but if you don't (and you like pancakes), then your weekend just got a lot better! Today, I want to share with you a gluten free and protein packed pancake recipe that I love! Growing up, I always looked forward to some fluffy, hot pancakes on the weekend (who doesn't), but never liked the feeling I had afterwards. Do you know the ones I'm talking about?? The ones that were just loaded with carbs (plus the syrup on top), non to little protein and fiber in them and gave you a heavy feeling in your stomach?? Well, all that is gone! These have great flavor, a crispy edge and don't make you feel like crap after you get done! Best of all... they are super easy to make. So, to avoid you being in suspense any longer - let's get started...
This recipe makes about six 6" pancakes. All you will need:
- 1 cup of Pamela's Baking and Pancake Mix
- 1/2 cup organic buckwheat flour
- 1 to 2 tbsp of gelatin (I used this one: Beef Gelatin)
- 2 eggs
- 1/4 to 1/2 cup of full fat coconut milk (or milk or water) - the jar on the counter has coconut milk in it :)
- 1 tsp vanilla
- Organic Extra Virgin Olive Oil for cooking (or coconut oil, ghee, butter)
Next, combine all the ingredients and whisk until smooth. Once you are done that, heat up your pan (I recommend a stainless pan or iron skillet) with the olive oil on medium to medium low heat. have a generous amount of oil in the pan, this is will help ensure crispy edges. Also, make sure the oil is hot (but not burning) before you put the batter in. Otherwise, the batter will soak up the oil before cooking in it. A good way to test if the oil is ready is to dip your whisk or rubber spatula (with only a little bit of batter on the tip) into the oil and see if it starts to fizzle. If it does, you're ready to go! Then pour in the batter and make whatever size pancake(s) you want. Mine look like these...
Once you have the bubbles coming through, you're ready to flip. And run back to the counter because you are going to want to add some good old, grass fee Kerrygold butter to these things!! I also cooked up a couple pieces of local organic bacon to go along with it and it made for a great breakfast. I hope you enjoy the recipe and have a great weekend!
