Top of the morning to you (unless you're reading this later in the day)! It's Tuesday, which means it's Table Time With Jim on Facebook and I wanted to share this little gem with you. Have you ever gotten up in the morning and wanted something different than the same old thing for breakfast?
It just seems like the same old thing sometimes. Well to be honest, in my case I really switch things up a bit for breakfast. One day I'll be having leftover salmon and the next day I might be eating beef stew. But in general, most people are programed to eat only "breakfast foods".
The things I hear, pretty frequently, that people eat for breakfast are things such as: oatmeal, cereal, fruit, bagels, a shake, eggs, or my favorite... NOTHING! I honestly don't know how people can go without anything for breakfast, but of course I understand that everyone's needs are different.
But what else could you have for breakfast that will still provide you some good protein, fats and carbohydrates?? How about we take couple things from above and make something delicious? Well that's exactly what I did one day and I keep in loop every now and then. It's breakfast apple crisp, which is almost like having dessert for breakfast... who wouldn't like that?
It's really simple to put together, but it has a little bit longer of a cooking time, so plan ahead and make sure you aren't starving. Of course typical apple crisp is topped with vanilla ice cream, but I found a great (and yummy) alternative, which is also dairy free for anyone out there with dairy issues. It's CocoWhip by SO Delicious, which is a whipped topping made with coconut oil. I won't keep you suspense any longer cause you might be getting hungry by now... Here's the recipe...
- 4 apples, sliced (I use Pink Lady or Gala)
- 1/3 cup packed coconut sugar
- 1 tbsp xylitol
- 1/2 cup Pamela's Gluten Free Baking and Pancake Mix
- 2/3 cup quick-cooking or old-fashioned oats
- 1/4 cup butter, softened
- 1-2 teaspoon ground cinnamon
- 1 tsp vanilla
- SO Delicious Whipped Topping (dairy free)
- Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening.
- Coat apples with vanilla and xylitol. Spread apples in pan. In medium bowl, stir remaining ingredients except whipped cream until well mixed; sprinkle over apples.
- Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with whipped topping.
So the next time you are trying to figure out what to have for breakfast and you want something a little different, give this a try. I know you won't be disappointed because the first time I made this, both my wife and son were eating it up like there was no tomorrow.
However, it actually is pretty filling so be careful how much you eat because your eyes might be a little bit bigger than your stomach once you have the first bite :) Please let me know what you think of it and I look forward to sharing more with you soon.
